Ireland South Coast

The Still House is a tour highlight with the burnished copper pot stills. One of them holds up to 141000 litres and is the largest in the world. The crushed malt and barley, called grist, is mixed with pure boiling water and allowed to ferment. The resulting liquid is called Wort to which yeast is added and finally it becomes alcohol after a few days. It is put in a series of stills like this and heated so the alcohol boils off then cools and collects again in a different still ie distillation occurs 3 times.
